Hemingway Moveable Feast gives mouthwatering descriptions of the French meals he had among various brasseries and restaurants of Paris:
The pommes a l'huile were fixed and marinated and the olive fuel palatable I ground black pepper over the potatoes and moistened the bread among the olive fuel After the 1st heavy chart of malt I drank and ate quite slowly. When the pommes de l'huile were gone I ordered again serving and a cervelas. This was a sausage prefer a heavy,wide frankfurter split among two and covered with a special mustard sauce.We had quite agreeable snails,http://www.jordan4firerednew.com/, with a carafe of Fleurie to start with. ... ate the snails finally,submerging up the butter, garlic and parsley sauce with broken bits of cake and drank the carafe of Fleurie.
Apart from the pommes and the escargot, Hemingway enjoyed tournedos (tenderloin cuts with sauce Bearnaise,chicken alternatively poularde de Bresse,good-looking foie de veau, bouvril mutton extract and water), endive salad and mentions eating for dessert a "fruit crown with fresh peaches and savage strawberries surrounded a tall glass pitcher with ice". All these French trays would be washed down with wine, Burgundy wines of special note.
